Everyone loves a good banana bread.. it’s simple, easy, and a great way to use up left over bananas.. plus it tastes delicious! Here is my version of this classic cake which also happens to be vegan, but trust me you’d never know it! Enjoy 🙂
Ingredients
250g self raising flour
100g caster sugar
100g light brown sugar
1 tsp bicarbonate of soda
1 tsp ground cinnamon
Pinch of salt
120ml vegan buttermilk
50ml vegetable oil
3 medium size, very ripe bananas
Equipment
Large mixing bowl
Sieve
Potato masher or fork
Whisk
Spatula
Large loaf tin
Baking parchment
Method
Step 1.
Start by lining your loaf tin with baking parchment, and pre-heat your oven to 170 degrees celsius
Step 2.
Peel the bananas and mash with a potato masher or fork
Step 3.
Sift together the dry ingredients into a large mixing bowl
Step 4.
Pour the buttermilk and vegetable oil into the bowl with the dry ingredients
Step 5.
Whisk together carefully until their are no lumps, then fold through the mashed bananas with your spatula
Step 6.
Pour the mixture into your baking tin and bake for anywhere between 45 minutes and an 75 minutes until well risen, golden brown, and when a knife inserted comes out clean
Step 7.
Allow to cool in the tin for 10 minutes, then remove and allow to cool completely on a wire rack
